I need to create a gradebook that takes into accoun different 'bins'. For example projects are worth 80% and skills are worth 20% of the term mark. I am not sure what is the best way to do this. Also, if I have tabs set up for each of the categories can I then move them to a final mark tab to calculate the final mark and letter grade.

You should give a look at this article , it explains the first steps to obtain a weighted average. After that, depending on the grade types (either text,numeric, or both) and the linked operations you've got more details here .
Anyway, once your at it, let me know if you have any questions.
To obtain the final mark in a different tab you must copy the final result of each term (tap&hold on a column's header) and then copy that result to your 'final' tab.
You can use letter grades or numeric at any time, they can be mixed in averages or just obtain them in the final mark, the details are explained here
